Rosemary and Garlic Pork Tenderloin with Root Vegetables

INGREDIENTS

  • 1 PNF Pork tenderloin 
  • 5 large garlic cloves, minced
  • 3 sprigs of fresh rosemary or 3 Tsp dried
  • 2 1/2 teaspoons pink himalayan salt
  • 1 teaspoon ground black pepper
  • 3 Red Potatoes, cut in wedges
  • 2 Carrots, cut in chunks
  • 1 Med Onion, cut into chunks
  • 2 Celery stalks, cut into chunks
  • 1 ½ Tbsp Olive Oil

INSTRUCTIONS

  • Preheat the oven to 400°F. 
  • Line 13 x 9 x 2-inch roasting pan with foil if desired
  • Cover bottom of pan with the olive oil
  • Place all vegetables in the bottom of your roasting pan
  • Season with salt, pepper, 2 cloves of garlic, 2 sprigs of rosemary
  • In a pan on the stove top sear your tenderloin on high for 30 second each side remove and place on top of the vegetables
  • Place the remaining garlic and rosemary on top of the tenderloin 
  • Cover with foil cook for 30 minutes
  • Remove then uncover and spoon juices over the tenderloin
  • Leave uncovered and roast for an additional 25 min or until meat and vegetables are done
  • Remove from the oven and let stand 10 - 15 minutes
  • To serve place all vegetables on a serving platter then slice the tenderloin and place on top pour the remaining juice over the dish and serve
