Meat Lovers Breakfast Muffins

1 LB Pederson’s Natural Farms Chorizo


1 LB Pederson’s Natural Farms Ham, Diced


12 Eggs


Salt


Pepper


Basil



  1. Heat oven to 350º.
  2. Cook Chorizo, and set aside.  
  3. Whisk together eggs, salt, and pepper.
  4. Place muffin tins in a muffin pan, and add 1 TBS of Chorizo and Ham in each tin.
  5. Add egg mixture until tin is 3/4 full.
  6. Place muffin pan in oven for 10 minutes, constantly checking to see if they are firm.
  7. Once firm, remove and enjoy!
