Simple is Poolside

Our thick cut chops are perfect poolside. Try grilling or one of our favorite recipes below.

Pederson’s pork comes from Duroc-sired hogs making it some of the juiciest, most tender pork you can find! A product of the United States, their pork is beautifully pink in color and perfectly marbled.

These chops come from the center of the loin located on the back of the hog. Because boneless chops can dry out quickly, be sure not to overcook. Average package weight 12-16 oz.

BEST FOR: Grilling, broiling, and pan-frying. Cook to an internal temperature of 145 F.

Dad’s Favorite Pork Chops


  • 2 1/2 Tbsp olive oil divided
  • 3 or 4  bone-in pork fresh pork chops 
  • Sea salt to taste
  • Black pepper to taste
  • 1 cup chicken stock
  • 2 tsp Dijon 
  • 1 Tbsp fresh or dried sage 
  • 1 1/2 tsp fresh or dried rosemary 
  • 1/2 tsp fresh or dried thyme 
  • 2 apples thinly sliced I used honeycrisp
  • 1 medium red onion


  1. Season pork chops with sea salt and pepper. 
  2. Add 1 1/2 Tbsp olive oil to cast iron pan heat over med to med high heat. 
  3. Add pork chops to pan, Sear 4-6 minutes each side 
  4. Remove pork chops to a plate.
  5. Add remaining 1 Tbsp oil to the skillet, add onion and apples. 
  6. Cook 6-8 minutes, stirring occasionally. Add in your chopped seasonings 
  7. In a small mixing bowl, whisk together chicken stock and dijon                                                 
  8. Pour in stock mixture, make sure to mix well stirring mixture frequently
  9. Place the pork chops back into the pan
  10. Cook 2-4 minutes, until the chops are done or reached desired cooking temp.
  11. Enjoy!
